A new chapter unfolds on Bali’s southern coast as Travelogues of the Archipelago returns for its second season. Conceived as a platform to explore Indonesia’s culinary identity through collaboration, the series continues with a focused opening that draws from the capital’s rich and layered food culture.
From 2 to 4 April 2026, Ikan Restaurant & Bar at The Westin Resort Nusa Dua, Bali becomes the setting for a three-day exchange, bringing together TAMU Restaurant and OSMO Bar Jakarta under one roof. The result is a dining experience that moves beyond presentation, rooted instead in storytelling, technique, and a shared respect for tradition.

A Closer Look at Betawi Cuisine
At the center of the collaboration is Chef Arief Rachman of TAMU Restaurant, presenting a menu that reflects the character of Betawi cuisine. Known for its bold spices and layered flavors, the cuisine carries influences shaped by Jakarta’s history as a cultural crossroads.
Through this showcase, the dishes are expressed with clarity and restraint. Familiar elements are preserved, while subtle refinements allow each ingredient to speak with more precision. The approach does not attempt to reinvent, but rather to reinterpret with intention.
Where Cocktails Meet Culture
Alongside the kitchen, OSMO Bar Jakarta introduces a contrasting yet complementary energy. Led by Azzabella “Bella” Putri, the bar takeover brings a selection of cocktails defined by inventive technique and a modern point of view.
Described as Bastardized Classics, each creation draws from recognizable foundations before shifting into something more unexpected. Local ingredients are woven into the compositions, adding depth and context without overwhelming the balance of the drink.
Two Kitchens, One Dialogue
The collaboration extends into a specially curated à la carte menu, developed jointly by Chef Mohamad Raviel of Ikan Restaurant & Bar and Chef Arief Rachman. Eighteen dishes in total reflect two distinct perspectives meeting at a common ground.
Rather than competing, the menus align through a shared philosophy, allowing guests to move between interpretations while maintaining a cohesive dining experience. Each dish becomes part of a larger narrative, shaped by both origin and evolution.

Set against the beachfront atmosphere of Nusa Dua, Ikan Restaurant & Bar offers a natural contrast to the intensity of the flavors presented. The openness of the space allows the experience to unfold without distraction, where food, conversation, and environment find their own rhythm.
Travelogues of the Archipelago continues to position itself not as a one-off event, but as an ongoing exploration of Indonesia’s culinary landscape. Each chapter introduces a new region, a new voice, and a new way of understanding the country through its food.
