Oliverra Launches Mixology Collective with NOTTE

Oliverra, the Mediterranean restaurant located at Umana Bali, LXR Hotels & Resorts, is introducing a new dining series called Mixology Collective. This initiative aims to blur the lines between the kitchen and the bar by featuring collaborations between prominent chefs and bartenders, exploring the relationship between fine cuisine and cocktail creation.

The inaugural event will feature Taketo Utsunomiya, who oversees the bar program at NOTTE Uluwatu. Together, they will present an exclusive six-course dinner that pairs each dish with a complementary cocktail, focusing on the interplay of flavors, textures, and concept.

Ngurah Putra, Executive Chef at Umana Bali, commented on the concept: “With Mixology Collective, we’re examining a harmonious approach to our dining philosophy — where food and drink are in sync. Taketo’s approach to flavor helps us discover unexpected pairs, enhancing the overall experience for diners.”

This first event is scheduled for Friday, 7 November 2025. It will commence with a Verde Gin Tonic aperitif, followed by a thoughtfully curated sequence of pairings. Highlights include oysters paired with a NIKKA Coffey Gin martini, scallops served alongside a cocktail of passionfruit, yuzu, and bamboo with a wasabi salt accent, and coffee-smoked beef cheeks matched with KOCH Mezcal and Bali’s LIMO liqueur. The evening will conclude with a whiskey and Earl Grey tea cocktail. Each course encourages guests to consider the possibilities of food-and-drink pairings, suggesting that cocktails can serve as extensions of the dishes.

Taketo Utsunomiya, Head Bartender at NOTTE Uluwatu, remarked, “Pairing cocktails with a tasting menu involves creating a balance. Each course represents a note, and the drinks provide the rhythm. The goal is to highlight subtle flavors and emotions, leaving a lasting impression after the meal.”

Mixology Collective represents a new direction in Bali’s dining scene, fostering collaboration that transcends traditional pairing to create a dynamic exchange of ideas. This experience is priced at IDR 1,700,000++ per person for the food only, with an optional cocktail pairing available for an additional IDR 800,000++.
