Guests then move into a choice of two mains. Golden Soil, a dry curry of minced pork with pumpkin taro purée and foraged greens. Or Embers Beneath the Earth, a slow braised beef brisket ragu layered with ear mushrooms, mulberry sauce, and caramelised chayote.
