Hotel Indigo Bali Seminyak Beach proudly presents the next chapter of its Southeast Asian dining journey at Makase, the resort’s signature all-day dining destination. Executive Chef Heri Riskiawan Efendi unveils a refreshed menu that honors the rich flavors and vibrant traditions of Southeast Asia while offering a refined dining experience in the heart of Seminyak.

A Refreshed Culinary Adventure

The updated menu showcases authentic dishes from Indonesia, Thailand, Malaysia, Singapore, and Vietnam. Personally curated by Chef Heri after extensive research and development, the menu allows guests to explore regional flavors through Soups, Small Plates, Mains, and Manis Nusantara selections.

Highlights include Konro Bakar, a Sulawesi-inspired dish featuring tender US Prime Beef Rib braised with aromatic spices; Ayam Bakar, a 500-gram boneless baby chicken served with pumpkin shoot and chili jam; and Larb Gai, a Thai-style minced chicken with iceberg lettuce, mint, Thai basil, and house-made sweet chili dipping sauce.

Dining Atmosphere

Makase combines modern architecture with timeless design elements, creating a warm, neighborhood-style dining experience. Guests may choose between intimate outdoor seating and spacious indoor areas, with capacity for up to 110 diners. The open kitchen concept allows guests to witness the culinary artistry firsthand. Makase welcomes diners daily from 6:30 am to 11 pm.

Sustainable and Local Sourcing

Chef Heri places strong emphasis on sustainability, working with locally sourced ingredients including rice, poultry, and dairy from Tabanan, as well as fresh produce from Bedugul. His approach highlights the island’s natural abundance while celebrating Southeast Asia’s dynamic culinary culture.  “The latest update of Makase’s menu draws from Southeast Asia’s vibrant street food traditions while offering an elevated interpretation for today’s discerning diners,” Chef Heri explained. “As a neighborhood-inspired resort, we are proud to add even more flavors to the Seminyak dining scene.”

About the Chef

Since beginning his career in 2006, Chef Heri has honed his craft across notable properties including W Maldives, Le Méridien Bali Jimbaran, and InterContinental Bali Resort. His expertise was also key during the pre-opening of Salazon Bali. Beyond the kitchen, Chef Heri enjoys motorcycle journeys and exploring new culinary landscapes, passions that continue to inspire his creations. Makase invites guests to embark on a Southeast Asian culinary journey guided by the chef’s creativity and passion.
