This August, The Oryza Restaurant at Resinda Hotel Karawang brings some of those stories to the table with a new menu celebrating the diversity of the Indonesian archipelago.
Created by Executive Chef Arif Wicaksono, the collection revisits familiar regional dishes through refined culinary techniques, contemporary presentation, and premium ingredients. The intention is not to reinvent Indonesian cuisine beyond recognition, but rather to reveal its character from a fresh perspective.
As Chef Arif puts it, “Traditions can continue to live when they are continuously explored.”
That philosophy runs throughout the menu, where dishes from eastern Indonesia to Java retain the flavors
and identities that made them distinctive in the first place.
From Ternate, With Freshness
The journey begins in North Maluku with Gohu Tuna Ternate, a refreshing appetizer rooted in the culinary traditions of Ternate. Sometimes described as the “Nusantara sashimi,” Gohu Tuna places fresh raw tuna at the center of the dish, complemented by the distinctive flavors associated with eastern Indonesian cooking.
It is an introduction that immediately sets the tone for the menu: recognizable Indonesian heritage, treated with restraint and presented for the contemporary table.
The Smoky Coast of Papua
Moving eastward, Ikan Bakar Papua celebrates the coastal traditions of Papua with an approach that allows the ingredient itself to remain the focus. The fish is simply grilled, developing a smoky aroma while preserving its natural flavor. Rather than relying on excessive embellishment, the dish reflects one of the menu’s recurring ideas—that sophistication can come from understanding when to let an ingredient speak for itself. For diners exploring the collection from beginning to end, it offers a distinctly different expression of Indonesian cuisine: uncomplicated, aromatic, and rooted in the sea.
A Javanese Classic, Elevated
For something warmer and more deeply spiced, Tongseng Wagyu turns to Java. The dish retains the character of traditional tongseng through its savory, slightly sweet broth layered with aromatic spices, cabbage, tomatoes, chilies, and sweet soy sauce. The addition of premium Wagyu beef brings tenderness and richness to the familiar recipe, creating a more indulgent interpretation without losing its unmistakably Javanese identity.
It is perhaps the clearest example of The Oryza Restaurant’s approach to the new collection: evolution rather than replacement. Tradition remains the starting point.

Gohu Tuna Ternate, Ikan Bakar Papua, and Tongseng Wagyu are only three highlights from a broader selection of new dishes introduced by The Oryza Restaurant.
