An Evening of Fire and Fermentation at Waatu Bali
A natural wine experience unfolds in Uluwatu, where low intervention pours meet flame driven cooking in a setting shaped by earth and intention.
Set against the quiet edge of Uluwatu, waatu introduces an evening that moves at its own pace. On 17 April, waatu Unfiltered: A Natural Wine Dialogue invites guests into a setting where wine and food are guided less by control and more by instinct.
The experience brings together a selection of natural wines curated alongside Toto Wines, each chosen for its honest expression. These are wines shaped by soil, season, and restraint, where minimal interference allows character to come through clearly in every glass.
The journey continues through a four course menu that follows the same philosophy. Each dish is composed to complement rather than compete, allowing flavors to unfold naturally. Cooking at waatu centers around fire, with ingredients prepared over coals in a way that highlights their depth and simplicity.
As the evening settles on the South Lawn, the experience becomes less about structure and more about flow. Between each pour and plate, there is space to pause, to observe, and to connect with the elements that define both the food and the wine.
At its core, the evening reflects a shared belief. That true expression comes from doing less, not more. That imperfection holds character. And that when left unfiltered, both food and wine reveal something far more personal.
