Padma Resort Legian Celebrates Indonesian Cuisine with Chef Theo Setyo

Padma Resort Legian presents two exclusive dining experiences in June 2026, bringing together Chef Theo Setyo and the resort’s culinary team for a flavorful tribute to Indonesia’s rich culinary heritage.

Padma Resort Legian is set to welcome one of Indonesia’s respected culinary figures, Chef Theo Setyo, for a special two-day guest chef collaboration this June. Known for his dedication to elevating Indonesian ingredients and regional recipes onto a broader culinary stage, Chef Theo will join the resort’s in-house chefs to present two distinctive dining experiences inspired by the flavors, traditions, and diversity of the Indonesian archipelago.

Taking place across DONBIU Restaurant and SKAI Bar & Grill, the culinary program will highlight both traditional Indonesian recipes and contemporary dining approaches. Guests can expect a thoughtful celebration of heritage, craftsmanship, and bold flavors through two curated evenings designed for food enthusiasts and travelers seeking a deeper connection to Indonesian cuisine.

The first experience, The Nusantara Table, will be held at DONBIU Restaurant on Friday, 26 June 2026. Presented as a Four-Hands Chef Collaboration Dinner, the one-night-only buffet will bring together Chef Theo Setyo and Padma Resort Legian’s Chef de Cuisine, Chef Arif Surya Priyanto.

The dinner pays tribute to Indonesia’s culinary roots while presenting familiar recipes in an elevated setting. Chef Arif will showcase refined Indonesian dishes such as Sapi Wagyu Maranggi, Royal Mangut Salmon, and Otak-Otak Bandeng. Chef Theo will complement the experience with several of his signature specialties, including Gulai Kambing, Bebek Bacem, and Ikan Kuah Arsik.

To complete the evening, guests can enjoy traditional Indonesian desserts including Klepon, along with a selection of Balinese and Indonesian-inspired cocktails available at a special price of IDR 138,000+ per glass.

Continuing the celebration, Woodfire Mediterranean Meets the Archipelago will take place at SKAI Bar & Grill on Saturday, 27 June 2026. This Six Hands, One Flame dining experience will feature Chef Samuel Barus, Chef Theo Setyo, and Chef Manu Gultom in a collaborative evening that combines woodfire Mediterranean cooking with Indonesian-inspired flavors.

Set against the beachfront atmosphere and skyline views of SKAI Bar & Grill, the dinner will be designed around sharing-style dining, open-fire cooking, fresh seafood, and premium ingredients. One of Chef Theo’s highlighted creations for the evening is Remis Plecing, which combines bulung, or fresh seaweed, with scallops.

Guests will be welcomed from 5 PM to 6 PM with a signature drink and pass-around canapés, while having the opportunity to mingle with Chef Theo, Chef Samuel, and Chef Manu before the dinner begins. Chef Samuel and Chef Manu will also bring Mediterranean influences and premium Tajima beef selections prepared over woodfire, adding another layer of craftsmanship to the evening.

Chef Manu Gultom, who previously collaborated with SKAI Bar & Grill last year, returns with his expertise in open-fire cooking and his understanding of the venue’s beachfront dining concept. The collaboration is expected to bring together different culinary perspectives, creating a dynamic evening rooted in creativity, technique, and respect for ingredients.

As the culinary figure leading the kitchen at SKAI Bar & Grill, Chef Samuel also expressed his excitement in presenting the venue’s first-ever six-hands dinner alongside nationally recognized culinary talents.
