Experience the Soul of Bali with Anantara Ubud's Wings & Roots of Payangan

Beyond Ubud’s bustling streets lies Payangan, a quieter corner of Bali where forests, farmland, and centuries-old traditions continue to shape everyday life. It is here that Anantara Ubud Bali Resort invites travellers to experience Wings & Roots of Payangan.

Running from 22 to 24 July 2026, the immersive programme is designed for those seeking a deeper connection with Bali beyond its familiar attractions. Blending guided exploration, authentic culinary experiences, and environmental stewardship, the journey showcases the people, landscapes, and traditions that have long defined the island’s highlands.

The experience begins with a foraging expedition through the countryside of Payangan, where guests join Made Warnata, Director of Spa, Wellness & Recreation, alongside Chef Agus Antara of Kirana Restaurant. Together, they introduce participants to indigenous herbs, seasonal produce, and traditional ingredients while sharing the stories of how these natural resources have shaped Balinese wellness and cuisine for generations.

Food takes centre stage on the second day with a harvest-inspired dinner at Kirana Restaurant, where acclaimed Indonesian culinary expert Chef Petty Elliott collaborates with Chef Agus to present a menu rooted in local ingredients and regional traditions. Known for her extensive work documenting Indonesia’s culinary heritage through publications including The Indonesian Table and The Indonesian Vegetarian Table, Chef Petty brings a thoughtful perspective that celebrates the relationship between food, culture, and community.

The final day reflects Anantara Ubud’s commitment to preserving Bali’s natural heritage through Bali Starling Release II, a conservation initiative supporting one of the island’s rarest endemic bird species. Guests are then invited to continue their cultural journey with the Harvest to Table Masterclass, where Chef Petty shares practical techniques, seasonal ingredients, and the stories behind Indonesia’s remarkably diverse culinary traditions in an engaging hands-on session.

More than a collection of activities, Wings & Roots of Payangan reflects a growing desire among modern travellers to experience destinations more meaningfully. By weaving together conservation, local knowledge, and authentic gastronomy, Anantara Ubud offers guests an opportunity to leave with more than photographs—they leave with a deeper understanding of the landscapes, flavours, and cultural traditions that continue to define Bali today.
