Jang Table Offers an Exclusive First Taste at Tangelo Bali
Chef Ray introduces his contemporary Korean dining concept through a two-night tasting experience at Cicada Resort Bali Ubud.
Tangelo Bali at Cicada Resort Bali Ubud, Autograph Collection, will host an exclusive preview of Jang Table, a new Korean dining concept by Chef Ray, also known as Suhwa Ku.
Presented as A New Culinary Chapter by Chef Ray: A First Taste of Jang Table, the two-night kitchen takeover will take place on 20 and 21 August 2026 at 7:00 PM, offering diners an early introduction to the concept before its official opening at Avala Nusa Dua, A Tribute Portfolio.
Set within Tangelo Bali’s intimate dining space, the experience combines contemporary Korean cuisine with the peaceful atmosphere of Ubud. Soft lighting, quiet surroundings and the resort’s natural setting provide a relaxed backdrop for an evening centred on craftsmanship, heritage and culinary exploration.
A Culinary Journey Shaped Across Three Countries
Jang Table reflects Chef Ray’s professional journey across South Korea, Australia and Hong Kong.
His career includes experience at several acclaimed and hat-awarded restaurants in Australia, where he developed a strong appreciation for fermentation and wood-fire cooking. He also spent a formative period at Mingles in Seoul, the renowned three-Michelin-star restaurant recognised for its contemporary interpretation of Korean cuisine.
These international experiences have shaped Chef Ray’s approach to Jang Table, combining his Korean heritage with refined techniques, thoughtful presentation and a personal understanding of hospitality.
Tradition Reimagined Through Jang
The name “Jang” refers to the traditional fermented sauces that form an essential foundation of Korean cuisine.
Drawing inspiration from this culinary heritage, Jang Table explores traditional Korean flavours through a contemporary international perspective. Fermentation and wood-fire cooking play central roles in the concept, complemented by modern techniques and refined presentation.
Rather than departing from tradition, Chef Ray uses these methods to deepen familiar flavours and present them in a way that feels expressive, personal and relevant to today’s dining landscape.
An Intimate Preview in Ubud
The Tangelo Bali takeover will feature an intimate tasting menu designed to introduce guests to the character and philosophy behind Jang Table.
Surrounded by the tranquil setting of Cicada Resort Bali Ubud, the evening will celebrate the connection between heritage, craftsmanship and creative expression through food.
The experience is priced at IDR 1,600,000++ per person. A special 15% privilege will be offered to the first five guests who confirm their reservations.
Seats are limited across both evenings, and advance reservations are recommended.
