Padma Resort Legian Welcomes Executive Pastry Chef Salman Pathan

Bringing more than 16 years of experience across luxury hospitality and Michelin-starred dining, Chef Salman Pathan joins Padma Resort Legian with a pastry philosophy shaped by French technique, international experience, and the flavours of Bali.

Padma Resort Legian has welcomed Salman Pathan as Executive Pastry Chef, marking a new chapter for the resort’s pastry programme as it continues to strengthen its culinary offering.

Originally from South Goa, India, Chef Salman began his professional pastry journey in 2010. Over the years, his career has taken him across some of the world’s most recognised luxury hospitality brands, including St. Regis, Anantara, Six Senses, and Four Seasons, with appointments spanning Qatar, Oman, Kuwait, and Japan.

Most recently, he served as Pastry Chef at Sézanne, the Three Michelin Star restaurant at Four Seasons Hotel Tokyo.

For Chef Salman, pastry sits at the intersection of precision and creativity. His approach draws from classic French pastry techniques while embracing seasonal ingredients, resulting in desserts that are refined, balanced, and expressive without losing their sense of familiarity.

Since joining Padma Resort Legian, Chef Salman has already begun bringing this philosophy to the resort’s culinary experiences, including its newly launched Bali Heritage Afternoon Tea. The sweet selection has been refined through French pastry techniques while incorporating local ingredients and flavours, creating a closer connection between the afternoon tea experience and its Balinese setting.

“Bali has a rich culinary culture, and Padma Resort Legian has built a strong reputation for its hospitality. I’m excited to be part of the team and look forward to contributing to one of Bali’s most iconic beachfront resorts,” shared Chef Salman.

Bringing Bali Into the Pastry Kitchen

Bali’s abundance of local produce is set to play an important role in Chef Salman’s future creations. Ingredients such as single-origin chocolate, Kintamani coffee, tropical fruits, and fresh herbs will be incorporated into desserts that combine international pastry techniques with distinctly local flavours.

The intention is not simply to reinterpret Balinese ingredients, but to create desserts that feel approachable while carrying a clear sense of place.

Guests can also look forward to Chef Salman’s signature French Éclair, which received a Gold Medal at HORECA Kuwait 2023. At Padma Resort Legian, the award-winning creation will be reimagined with a Balinese twist, reflecting his ongoing interest in balancing tradition with innovation.

A New Culinary Chapter at Padma Resort Legian

Beyond the kitchen, Chef Salman is equally enthusiastic about beginning a new chapter in Bali. An avid traveller who enjoys driving and exploring the outdoors, he plans to make the most of island life through swimming, volleyball, and discovering Bali’s landscapes and communities.

His arrival adds another international perspective to Padma Resort Legian’s culinary team, while his focus on local produce provides an opportunity to create pastry experiences that feel closely connected to the destination.
