Two Cultures, One Table: Tangelo Bali Presents A Taste of Ginza by Hakkoku, with the Spirit of Bali
For two evenings this September, the quiet landscapes of Sebatu will become the setting for an intimate meeting of Japanese culinary precision and Balinese hospitality.
On September 4 and 5, 2026, Tangelo Bali at Cicada Resort Bali Ubud, Autograph Collection welcomes Hakkoku Bali for A Taste of Ginza, a nine-course omakase experience bringing the craftsmanship and philosophy of one of Ginza’s celebrated sushi names to Ubud.
Founded in Ginza in 2018 by renowned sushi chef Hiroyuki Sato, Hakkoku approaches sushi through an ongoing pursuit of balance: between fish and rice, tradition and evolution, and ultimately, between chef and guest. Since arriving in Bali in 2024, the restaurant has carried this philosophy into a new environment, pairing imported ingredients with thoughtfully sourced local produce while allowing Indonesia’s character to become part of the experience.
The result is a culinary dialogue rather than a simple transplant of Tokyo tradition.
Central to Hakkoku Bali’s identity is “Indotenashi,” its interpretation of the Japanese philosophy of Omotenashi through the warmth and openness of Indonesian culture. It is an approach to hospitality that extends beyond service, shaping how each course is presented and how guests experience the evening as a whole.
Across nine carefully considered courses, guests will be taken through a progression of sushi and seasonal creations that reflect Hakkoku’s Japanese heritage while embracing its Bali identity. Premium imported ingredients sit alongside selected local produce, bringing Ginza’s discipline and refinement into conversation with the flavors, atmosphere, and sensibilities of the island.
The setting adds another dimension. Surrounded by the tranquil landscape of Cicada Resort Bali Ubud, the experience moves away from the energy of Ginza and into the stillness of Sebatu Valley. The resort itself draws inspiration from nature, renewal, and the Balinese philosophy of Tri Hita Karana, creating an environment centered on harmony between people, nature, and the spiritual world.
Against this backdrop, A Taste of Ginza becomes more than a visiting-chef dinner. It is an encounter between two hospitality cultures—one expressed through the meticulous rituals of Japanese sushi craftsmanship, the other through Bali’s instinctive sense of warmth and connection.
The nine-course omakase will be presented across two seatings each evening, at 5:00 PM and 7:30 PM, priced at IDR 1,700,000++ per person.
With only a limited number of seats available across September 4 and 5, advance reservations are highly recommended.
