Set against the quiet edge of Uluwatu, waatu introduces an evening that moves at its own pace. On 17 April, waatu Unfiltered: A Natural Wine Dialogue invites guests into a setting where wine and food are guided less by control and more by instinct.

The experience brings together a selection of natural wines curated alongside Toto Wines, each chosen for its honest expression. These are wines shaped by soil, season, and restraint, where minimal interference allows character to come through clearly in every glass.

The journey continues through a four course menu that follows the same philosophy. Each dish is composed to complement rather than compete, allowing flavors to unfold naturally. Cooking at waatu centers around fire, with ingredients prepared over coals in a way that highlights their depth and simplicity.
