The Westin Resort Nusa Dua, Bali is celebrating the achievement of bartender Deni Alan Hartono, who has been named Indonesia’s winner of the Marriott International Sustainable Bartender Championship Indonesia & Malaysia 2026.

Deni secured the title with his original cocktail, Segara Alchemy, earning the opportunity to represent Indonesia at the upcoming Marriott International Sustainable Bartender Championship Asia-Pacific Finals. There, he will compete alongside leading bartenders from across the region.

A Cocktail Shaped by Bali’s Coastline

Created around the competition theme, The Future Larder, Segara Alchemy brings together Bali’s coastal character, contemporary mixology and a thoughtful approach to sustainability.

The cocktail was inspired by the atmosphere of Ikan Restaurant & Bar and the island’s enduring relationship with the sea. Deni envisioned a drink that captured the refreshing and vibrant feeling of Bali’s coastline while demonstrating how ingredients that may otherwise be discarded can be transformed into something refined and memorable.

Its name reflects the story behind the creation. Segara, meaning “ocean” in Balinese, represents the island’s connection to the sea, while Alchemy refers to the transformation of overlooked ingredients into something extraordinary.

The result is a crisp and sparkling cocktail layered with bright citrus, delicate smoke, subtle umami and a clean, refreshing finish. To create its distinctive flavour, Deni gently washes Absolut Elyx Vodka with smoked cakalang oil sourced from the kitchen at Ikan Restaurant & Bar before combining it with repurposed ingredients.

Through this process, Segara Alchemy presents sustainability not as a limitation, but as an opportunity for greater creativity, purpose and innovation.

Celebrating the Future of Sustainable Mixology

Organised by Marriott International, the Sustainable Bartender Championship recognises emerging beverage talent while highlighting creativity, local storytelling and responsible operational practices.

Under the theme The Future Larder, participating bartenders were challenged to develop cocktails that balanced future-focused ingredients with sustainable operations, commercial potential, flavour and presentation.

Deni’s victory places him among Marriott International’s rising beverage talents and gives him the opportunity to present Segara Alchemy on the Asia-Pacific stage.

“I’m truly grateful and honoured to receive this recognition. It means so much to me to have the opportunity to represent Indonesia at the Marriott International APEC Sustainable Bartender Championship,” Deni said.

He added that the journey had encouraged him to continue learning, growing and challenging himself while creating guest experiences that reflect the warmth of Balinese hospitality.
