Fire & Tide Brings a Polynesian Beachfront Dining Experience to ENVY Restaurant
ENVY Restaurant presents Fire & Tide, a one night chef collaboration with Chef Manu Gultom of Nui Da Mano, bringing open flame cooking, Polynesian flavors, and oceanfront dining together in Kuta.
ENVY Restaurant introduces the next chapter of its ENVY Collaboration Series with Fire & Tide, a beachfront chef collaboration set to take place on Saturday, 18 July 2026. Hosted at ENVY Restaurant against the sweeping backdrop of the Indian Ocean, the evening welcomes Chef Manu Gultom, Executive Chef of Nui Da Mano, for a dining experience shaped by fire, tide, and the bold spirit of Polynesian cooking.
Known for his expressive approach to open flame cooking, layered spices, and Pacific island inspired flavors, Chef Manu brings a distinctive culinary identity to ENVY’s beachfront stage. Fire & Tide is designed as an evening where the ocean sets the mood, the flame defines the technique, and the sauce carries the story.
The event presents a curated buffet concept with a refined tableside approach. Rather than gathering around a traditional buffet station, guests will enjoy individually plated dishes served directly to the table, allowing each course to feel considered, personal, and full of character. The experience moves through a progression of flavors, from bright citrus notes to smoky, savory, and umami rich finishes that reflect Chef Manu’s understanding of fire, spice, and island tradition.
The evening opens with Wild Caught Grouper, grilled and finished with chili bean sauce, followed by Dry Aged Amberjack Ceviche, aged for fourteen days and served with mango coconut dressing. At the heart of the menu is Tajima Australian Wagyu Brisket MB 4 to 5, slow cooked for eighteen hours and served with Chef Manu’s celebrated chili kalamansi sauce.
To complement the evening, Isola will provide a wine selection curated to match the bold and layered nature of the menu. Fire & Tide is also proudly supported by Equil, Isola Wine, and Tajima Australian Grainfed Wagyu, bringing together partners that share a commitment to quality, flavor, and memorable dining.
Through the ENVY Collaboration Series, ENVY Restaurant continues to create a platform for culinary exchange in Kuta, inviting guest chefs to bring their own identity, techniques, and stories to its beachfront setting. With Chef Manu Gultom at the center of this edition, Fire & Tide becomes more than a dinner. It is a meeting of fire, ocean, and island inspired creativity.
