Uma Cucina Marks 13 Years With The Return Of The Pasta Heist
Chef Diego Martinelli reunites with the Uma Cucina team for three evenings celebrating Italian craftsmanship, shared tables and a collaboration first brought to life in 2025.
This September, Uma Cucina at COMO Uma Ubud celebrates its 13th anniversary with the return of The Pasta Heist, welcoming back Chef Diego Martinelli, founder of CIBO! Bali, for a three-night culinary collaboration from 21–23 September 2026. Following the success of its inaugural edition last year, The Pasta Heist 2.0 brings a new menu to Ubud while continuing a partnership rooted in a shared appreciation for generous, thoughtful Italian cooking.
For more than a decade, Uma Cucina has brought the convivial spirit of Italian dining to the heart of Ubud. Its 13th anniversary offers a fitting moment to celebrate not only the restaurant’s journey, but also the friendships and collaborations that have shaped its identity over the years. After the warm reception of the first Pasta Heist in 2025, inviting Chef Diego back for a second chapter became a natural way to mark the milestone.
A Return to the Uma Cucina Kitchen
Born in Bologna, in Italy’s Emilia-Romagna region, Chef Diego Martinelli brings more than 25 years of international experience to the collaboration. His career has taken him through kitchens at Four Seasons Hotels, Bulgari Hotels & Resorts and Ferrari’s Il Cavallino restaurant, before eventually leading him to Bali. Today, through CIBO! Bali, he continues to celebrate the food of his homeland with an emphasis on handmade pasta, quality ingredients and the generosity and simplicity associated with Italian cooking.
The collaboration is particularly meaningful for Chef Diego, who describes the first Pasta Heist as a meeting of two kitchens with a similar philosophy. Returning for Uma Cucina’s anniversary allows the teams to build on that chemistry while introducing guests to something familiar yet distinctly new.
Italian Classics, Reimagined
For The Pasta Heist 2.0, Chef Diego and the Uma Cucina team have created a menu rooted in Italian classics, elevated through considered contemporary touches.
Among the highlights is Tortellini al Ragù, bringing a taste of Bologna to Bali through handmade tortellini, traditional beef Bolognese ragù and nutmeg-scented béchamel. Seafood Linguine combines artisanal pasta with seafood bisque, live tiger prawns, garlic and chilli, while Bucatini Cacio e Pepe is finished with Pecorino Romano, pickled grapes, roasted almonds and freshly cracked black pepper.
The menu also ventures beyond pasta. Vitello Tonnato pairs thinly sliced veal tenderloin with velvety tuna sauce and crispy capers, while Tuna Crudo brings together smoked eggplant, stracciatella and pistachio crumbs. Heartier selections include Braised Pork Belly with pumpkin purée, red onion jam, seared broccolini and thyme jus, alongside Seared Barramundi with roasted asparagus, basil-whipped potatoes and caper-lemon butter.
Dessert keeps the experience firmly rooted in comfort, with classics including Tiramisu and a Hot Chocolate Lava Cake crafted with single-origin cocoa, salted caramel and fior di latte gelato.
Thirteen Years Around the Table
For Gede Suteja, Cluster General Manager of COMO Uma Ubud and COMO Shambhala Estate, the anniversary is as much about people and relationships as it is about food. Uma Cucina has long been a place for guests, local residents and friends to gather in a relaxed setting, and the return of Chef Diego reflects the collaborative spirit that continues to define the restaurant.
That philosophy has remained consistent since Uma Cucina’s beginning: approachable Italian food made for sharing, uncomplicated hospitality and the simple pleasure of gathering around the table. With Chef Diego once again behind the pass, The Pasta Heist 2.0 adds another chapter to that story and a fitting celebration of 13 years in Ubud.
