Santanera Brings Bold Latin Flavors to CIRE at Alila Villas Uluwatu
For two evenings only, CIRE welcomes Santanera Bali for a cliffside dining collaboration shaped by Colombian heritage, global influences, and the relaxed sophistication of Uluwatu.
Perched above the dramatic cliffs of Uluwatu, where sweeping ocean views meet the quiet elegance of Alila Villas Uluwatu, CIRE is set to host Santanera Bali for a special two night culinary collaboration on 19 and 20 June 2026.
The experience invites guests to discover Santanera’s vibrant culinary identity through a specially curated à la carte menu, presenting signature dishes that celebrate bold Latin inspired flavors and the restaurant’s distinctive approach to dining. Known for blending Colombian heritage, global influences, and Bali’s exceptional local produce, Santanera brings a journey of flavor rooted in connection, creativity, and discovery.
For this collaboration, Santanera’s expressive culinary language arrives in Uluwatu with dishes shaped by open fire cooking, fermentation, chargrilling, fresh seafood, and locally sourced ingredients. Each creation is reimagined through a contemporary Latin American lens, while CIRE provides a refined coastal setting framed by the Indian Ocean.
Highlights from the collaborative menu include Caribbean Curried Spanner Crab with brown butter and toston, Scallop Tostada with green sambal and tarama, Carrara Wagyu Intercostal with salsa roja and rice arepa, Char Grilled Octopus with cabbage and chili lemon emulsion, Dry Aged Duck with charred kale and caramelized yogurt, and Wagyu Brisket with tomatillo escabeche and breadfruit purée.
The experience continues into dessert with refreshing and indulgent finales, including Passion Fruit Sorbet with mango granita and Churros with dark chocolate, vanilla ice cream, and dulce de leche.
More than a pop up dining experience, the collaboration reflects a shared appreciation for culture, craftsmanship, and a strong sense of place.
