Bali’s beachfront dining scene welcomes a spirited collaboration as SKAI Bar & Grill presents Mixology Takeover Vol. 3, a one night cocktail experience with Deva Diantara of SKOOL Kitchen. Taking place on Saturday, 23 May 2026, from 6 pm to 10 pm, the evening brings together creative drinks, relaxed hospitality, and the easy charm of sunset dining in Legian.

Known for its laidback energy, thoughtful food, and distinctive bar culture, SKOOL Kitchen recently earned a place among Tatler’s Best 20 Restaurants in Indonesia. For this special appearance at SKAI Bar & Grill, Deva brings that same character into a cocktail lineup designed to feel fresh, approachable, and quietly inventive.

At the heart of the takeover is Deva’s use of the shrub technique, a traditional method that balances fruit, sugar, and vinegar to create cocktails with brightness, depth, and a refreshing finish. One of the evening’s most intriguing ingredients is mengkudu, also known as noni, an Indonesian native fruit often recognized for its bold, bitter, and astringent profile. In Deva’s hands, the familiar local fruit is reimagined into something vibrant, balanced, and unexpectedly easy to enjoy.

Among the highlights is Tomat, a lighter and more playful take on the classic Bloody Mary. Keeping the richness of tomato while reducing much of its intensity, the cocktail offers a cleaner, brighter interpretation that feels made for Bali’s coastal mood.

The drinks are crafted to pair naturally with SKAI Bar & Grill favourites, including Smoked Beef Patty, Wood-Fired Chicken, and Grilled Halloumi. Together, the menu creates an effortless rhythm of good drinks, comforting dishes, and beachfront atmosphere.

“I want people to walk into SKAI and instantly feel comfortable, like they’re home, surrounded by good food, good drinks, and good people,” says Deva.
