Discover Tanah Liat, a Seafood Dining Destination in Nusa Dua, Bali

From Balinese-inspired seafood specialties to a Seafood Market featuring freshly selected catches cooked on the spot, Tanah Liat celebrates the flavors of the sea

At Tanah Liat, seafood takes its cue from Bali’s markets, spices, and traditional cooking techniques. Located at Renaissance Bali Nusa Dua Resort, the restaurant brings these influences to the dinner table through a sharing menu and a Seafood Market where guests can choose their catch and have it prepared to order.

Chef Eka Payana draws on local fish markets, relationships with fishermen, and the ingredients that define the island’s culinary traditions. His approach shapes Flavors of Sea & Spice, a dining experience that pairs seafood with Balinese preparations and Indonesian accompaniments.

“Every morning begins with what the sea offers,” says Chef Eka. “We embrace traditional techniques like Nyat-Nyat to honor the integrity of local ingredients, allowing each flavor to shine while staying true to Bali’s culinary roots.”

Among the signature dishes is Lobster Nyat Nyat, with lobster simmered in aromatic Balinese herbs and spices. Mixed Seafood Pesmol offers another expression of the catch of the day, prepared in a fragrant turmeric-based sauce.

The seafood is served alongside Urab Kecipir, a winged bean salad tossed with spiced coconut, and Nasi Bakar, rice wrapped in banana leaves and grilled. A selection of sambal ulek, sambal matah, sambal terasi, and sambal mangga brings varying notes of heat and freshness to the meal.

Priced at IDR 990,000++ for two people, Flavors of Sea & Spice invites diners to explore these dishes together, with the sharing format allowing the seafood, sides, and sambals to be enjoyed in different combinations.

On Mondays, Wednesdays, and Fridays, Tanah Liat’s Seafood Market offers a more hands-on way to dine. Guests select their preferred seafood from the available fresh catch before the chef prepares it on the spot. Watching the ingredients move from the selection to the cooking station adds another dimension to the meal and offers a closer look at the culinary team’s work.

Together, the two experiences introduce different sides of Tanah Liat’s approach to seafood: the Balinese flavors of its sharing menu and the flexibility of choosing a fresh catch prepared to order.

Tanah Liat is open daily for dinner from 6:00 p.m. to 10:30 p.m. For reservations and further information, email bf.reservations@renaissancehotels.com or contact the team via WhatsApp at +62 811 3820 5490.
