Umana Bali Introduces Sunday at Oliverra, a New Collaborative Brunch Series

The new Sunday concept brings guest creatives to Oliverra’s Mediterranean table, beginning with mixologist Dré Masso on 18 October

Oliverra, the clifftop restaurant and bar at Umana Bali, LXR Hotels & Resorts, will launch Sunday at Oliverra on October 18, 2026. Building on its Mediterranean Sunday Brunch, the new series will welcome guest chefs, mixologists, winemakers, and selected lifestyle creatives, with each collaboration bringing a different perspective to the table.

The inaugural edition features mixologist Dré Masso, whose international career and longstanding ties to Indonesia inform a selection of three signature cocktails. Served above the Indian Ocean, the experience pairs his drinks with Oliverra’s established brunch of seafood, antipasti, handmade pasta, risotto, and dishes cooked over the Josper grill and wood fire.

Three cocktails by Dré Masso

Masso’s lineup opens with the Needle Drop Daiquiri, originally created for the opening of Blue Note Jazz Club London. The cocktail combines Nusa Caña Tropical and Coconut Rums with clear citrus and fresh rosemary.

Indo Punch explores the region’s rum heritage through a blend of Nusa Caña, dark and spiced rums, Batavian Arrack, pressed pineapple, fresh lemon, and nutmeg. The third drink, Bali Coffee, brings together Nusa Caña Coffee Rum, Licor 43, espresso, and dark chocolate notes.

With more than three decades in the bar industry, Masso’s career spans London and Asia. He is a global advocate for Nusa Caña Rum and co-creator of Nusa Caña Coconut Rum, and previously led beverage programs for Potato Head. In 2025, he received the Best International Brand Ambassador award at the Spirited Awards during Tales of the Cocktail in New Orleans.

Mediterranean dishes for a leisurely Sunday

The brunch begins with a Cold Seafood Platter featuring river prawns, fresh oysters, Papua crab, coconut-cured seabream, yellowfin tuna, and caviar. Other highlights include Hamachi Crudo with fennel, mullet roe, and kaffir lime, and Seafood Risotto with grilled river prawns and a shellfish base.

From the Josper grill, octopus is served with kale, smoked eggplant, and beet foam. Wagyu Tokusen Striploin M5 comes with potato espuma and red wine jus, while locally produced artisan cheeses and miniature desserts from the pastry kitchen round out the meal.

Nicolas Kassab, general manager of Umana Bali, LXR Hotels & Resorts, describes the series as a way to keep the brunch evolving while preserving its generous food, relaxed pace, and connection to its setting. Masso’s international outlook and close relationship with Indonesia made him a fitting collaborator for the first edition.
