Harmoni Rasa Nusantara: Where Indonesia's Culinary Heritage Meets a Modern Touch

Resinda Hotel Karawang brings together Executive Chef Arif Wicaksono and AKASTA Jakarta’s Chef-Owner Patrick David Ramon for a five-course exploration of Indonesian cuisine on September 5, 2026.

Resinda Hotel Karawang presents Harmoni Rasa Nusantara, a chef collaboration between Executive Chef Arif Wicaksono of Resinda Hotel Karawang and Chef-Owner Patrick David Ramon of AKASTA Jakarta.

Celebrating the diversity of Indonesian cuisine, the experience takes guests on a journey through five signature dishes from across the archipelago. Each dish is reinterpreted through a contemporary culinary lens while remaining true to the flavors, ingredients, and traditions of its origin. Harmoni Rasa Nusantara will take place on September 5, 2026, at The Oryza Restaurant at Resinda Hotel Karawang.

“Harmoni Rasa Nusantara is more than a dining experience. It is a journey that rediscovers the extraordinary richness of Indonesian cuisine through a modern perspective while honoring timeless flavors, thoughtfully reimagined for a new generation of culinary enthusiasts,” said Arif Wicaksono, Executive Chef of Resinda Hotel Karawang.

A contemporary interpretation of Minangkabau culinary heritage, the dish pairs fresh seafood with deeply aromatic kalio spices for a complex and richly layered result.

The chefs’ collaborative interpretation of Balinese cuisine features tender duck prepared with a generous blend of traditional spices, creating a complex yet harmonious balance of flavors.

The culinary journey concludes with a modern dessert that combines the bold character of Medan durian with the richness of cheese, creating an indulgent interplay of flavors and textures.

Chef Patrick David Ramon is known for a modern culinary approach grounded in Indonesia’s gastronomic heritage. With more than a decade of professional experience in Europe, the Chef-Owner of AKASTA Jakarta continues to explore how the country’s ingredients, spices, and traditions can be translated into contemporary dining experiences.

The exclusive culinary experience is priced at IDR 600,000 nett per person.

“This collaboration presents a dining experience that goes beyond food. It is about stories, culture, and the richness of Indonesia. Through Harmoni Rasa Nusantara, we invite guests to rediscover the flavors of the archipelago through an experience that is modern, refined, and sophisticated while remaining deeply rooted in the Indonesian spirit,” said Patrick David Ramon, Chef-Owner of AKASTA Jakarta.
